Mother’s Day special- Bombay Sandwich & Carrot Cake!
Remember kids, it’s Mother’s Day every day and you should treat your mum like a queen all year. However, why not treat your mum to some nice lunch? If you can, decorate your tables with some yummy food! You’ve all been making cakes/ cupcakes all year with Khalsa Foundation, so why not bake some for today and surprise your mums?
Strictly no mums allowed in the kitchen. If you have no choice then please get mum to help you prep all the ingredients. You can do the rest!
Bombay Sandwich:
Ingredients
GREEN CHUTNEY
* 1 small handful of mint leaves
* 1 large handful of fresh coriander
* Green chillies, 1–2, please be careful when handling these.
* Ginger 1cm piece, peeled
* Dash of lemon juice
* Salt
Alternatively, you can buy ready made green chutney from an Indian supermarket . It comes in a jar and is called “Bombay Sandwich Green Chutney”
MASALA MIX
* Chaat masala
* 1 pinch of ground coriander/ optional
* 1 pinch of black pepper
* 1 pinch of salt
* Any masalas of your choice, chaat masala is essential though.
* 1 medium boiled potato
Bombay Sandwich:
* 2 slices of white bread
* cheese, grated (any melting cheese will do)
* 1/4 cucumber, sliced
* 1 tomato, sliced
* 1 red onion, sliced
* butter
* Ketchup
You’ll need a toastie maker, George Foreman/ panini press. If you don’t have a toastie maker you can you use a frying pan/ griddle.
Please have all the ingredients ready and please Pre boil the potato so that it is ready.
Carrot Cake
Ingredients
-15oz Self Raising Flour
-2 tsp baking powder
-2 tsp cinnamon powder
-1 tsp salt
-4 tsp egg replacer (Orgran brand or egg replacer of choice)
– 500g Carrots (grated finely in food processor)
– 1 tsp Vanilla essence
-200ml vegetable oil
-10oz Caster sugar
-100ml water to add at the end
Cream Cheese Frosting
– 8oz Icing Sugar
– 4oz Cream Cheese
– 4oz Margarine
– half tsp Vanilla Extract
– handful of walnuts(optional)
33cm x 23cm baking tray or 2 x 9inch round or square tins
